- 1 cup seedless raisins
- 3 cups pecans coarsely chopped
- 3 ½ cups flour
- 1 teaspoon baking soda mixed with 2 tablespoons boiling water
- 1 teaspoon cinnamon
- 1 teaspoon all spice
- 1 teaspoon cloves
- ½ cup butter
- 1 ½ cups sugar
- 3 eggs
Sift the flour, cinnamon, all spice, and cloves together into a large bowl to ensure everything is evenly combined.
Lightly sprinkle a small amount of the flour mixture over the raisins and chopped pecans. This helps prevent them from sinking in the batter.
In the bowl of a stand mixer, mix the butter and sugar on medium speed until well combined and slightly fluffy.
Add the eggs one at a time, mixing well after each addition.
Slowly add the flour mixture to the butter and sugar mixture, continuing to mix until combined.
Add the baking soda that has been mixed with boiling water.
Fold in the raisins and pecans and mix well to combine everything evenly.
Drop small rounded scoops of dough onto a nonstick or greased baking sheet using a cookie scoop.
Bake at 350 degrees for 8 to 10 minutes until the cookies are set but still soft.
Allow the cookies to cool, then serve and enjoy.
