Easy and Delicious Blackberry Tarts Recipe

Every summer my mother-in-law would make these delicious blackberry tarts before any of our camping trips, vacations or boating trips. They were such a delicious treat made with so much love. We were luck enough to have a basic handwritten recipe but as with all good recipes, there were lots of unwritten tips and tricks. I am so grateful that she passed these extra bits of the recipe on to my youngest son and sister-in-law so that we are still able to enjoy the love and joy she brought us every Summer with these tarts even though she is no longer with us.

Blackberry Tarts Recipe:

Ingredients:

  • 2 cups Sugar
  • 1 tsp Cinnamon
  • 3 tsp Baking Powder
  • 6 cups All-Purpose Flour
  • 4 Eggs
  • 3/4 cups Canola Oil
  • 5 oz Evaporated Milk
  • 1 1/2 Cups Blackberry Preserves (You can read my blog post with the Blackberry Preserve Recipe here)

Cooking Instructions for Blackberry Tarts

Step One: Preheat Oven

Set your oven to 350 degrees Fahrenheit. This ensures it’s ready to bake your tarts to perfection.

Step Two: Mix Dry Ingredients

In a large bowl, combine 2 cups of sugar, 1 teaspoon of cinnamon, and 3 teaspoons of baking powder. Stir well to ensure everything is evenly distributed.

Step Three: Prepare Wet Ingredients

In a small bowl, beat 4 eggs. Add 3/4 cups of canola oil and 5 ounces of evaporated milk. Mix thoroughly until well combined.

Step Four: Combine Wet and Dry Ingredients

Gradually add the wet mixture to the dry ingredients, mixing thoroughly to combine. The batter will start to come together into a dough.

Step Five: Incorporate the Flour

Add 6 cups of all-purpose flour to the mixture. Combine flour one cup at a time. Mix and knead the dough as you go. You should end up with a smooth, cohesive dough.

Step Six: Prepare the Dough

On a lightly-floured surface, spread and roll dough out evenly using a rolling pin. Aim for a thickness of about 1/4 inch. Use a wide-mouth mason jar lid to cut out circles from the dough.

Step Seven: Assemble the Tarts

Place the dough circles onto a baking sheet lined with parchment paper or baking stone. Add 1 tablespoon of blackberry mixture to the center of each circle. Cover each with another circle of dough and press the edges together with your fingers or back of a spoon to seal.

Step Eight: Bake

Place the baking sheet in the preheated oven and bake blackberry tart for 8-10 minutes, or until the tarts are a light golden brown with the bottom crust a medium golden brown.

Step Nine: Cool and Enjoy

Once baked, let the tarts cool completely on a wire rack. Enjoy your delicious homemade blackberry tarts!

Homemade Blackberry Tarts

Ingredients

  • 2 cups Sugar
  • 1 tsp Cinnamon
  • 3 tsp Baking Powder
  • 6 cups All Purpose Flour
  • 4 Eggs
  • 3/4 cups Canola Oil
  • 5 oz Evaporated Milk
  • 1 1/2 Cups Blackberry Preserves

Instructions

  • Preheat oven to 350 degrees.
  • Mix sugar, cinnamon and baking powder in large mixing bowl.
  • In a separate bowl, mix 4 eggs, canola oil and evaporated milk.
  • Add wet ingredients to dry ingredients and mix thoroughly to combine.
  • Add flour to mixture 1 cup at a time while mixing, kneading to combine.
  • Flour worksurface and spread dough.
  • Cut out tart shapes using wide mouth mason jar lid.
  • Spread circle dough pieces onto baking sheet.
  • Add 1 tablespoon of preserves to the center of each dough circle.
  • Cover with another circle piece of dough and press edges together with fingers to secure.
  • Bake for 8-10 minutes.
  • Cool completely and enjoy!
